1 bag fresh baby spinach
1 cup walnuts or almonds, slivered
1 cup blue or cheddar cheese
1 large granny smith apple
1 cup dried cranberries
1/4 cup red onion thinly sliced
1/3 cup cranberry juice
1/3 cup olive oil (or canola)
1/3 cup balsamic vinegar
1/3 cup sugar or maple syrup

Combine dry salad ingredients in a large salad bowl.
Blend cranberry juice, oil, vinegar, and sugar in a small bowl. Pour over salad.  Toss and serve immediately.

6 servings.  Note: you may not need all of the dressing.
